Diners can tuck into lunch, Friday brunch or dinner. The new menu includes indulgent appetisers such as foie gras grilled and served with glazed cherries and fresh almonds, mint veloute on a sweet onion emulsion, and king crab with Amalfi lemon, caviar, and yuzu sour cream. With a number of new main courses including Maine lobster with saffron couscous and bouillabaisse emulsion, Australian wagyu sirloin with a duck confit potato and glazed shallot and capsicum relish, and white cod miso from Patagonia served with a pepper sauce and seasonal white asparagus. Semblat is a protégé of Jeol Robuchon and has won multiple Michelin stars for his previous restaurants in Paris, Macau, and Shanghai.
